Watermelon & Lemon Juice

Happy Monday dear friends! 

I don't know about your part of the world, but here we are literally melting from the heat! Even our one week escapade to Ohrid did not help.  

We've been trying to alleviate the abnormal temperatures with lots of water and natural juices, and this watermelon & lemon juice has been a real saviour. 

To make the juice you need 2 kilos of watermelon, 4 lemons and basil leaves. 

1) Cut watermelon into slices and remove seeds.
2) Blend the watermelon finely and pour it into a jug through a strainer to reduce pulp. If you don't mind it, leave as is - I like mine pulp-y. 
3) Squeeze lemons and add the juice along with a couple of basil (or mint) leaves. 
4) Add ice cubes and your perfect summer drink is ready. 

Watermelon is extremely beneficial. This is an amazing fruit that has 92% water, so it keeps you hydrated. It is rich in vitamins and minerals: Vitamins C, A, B1,B5 and B6, Potassium and Magnesium.
Watermelon is also high in antioxidants: carotenoids, including beta-carotene and lycopene. Plus, it has citrulline, an important amino acid. 

It is good for the heart, muscles, hair and skin.

Why, a long, cool drink of watermelon and lemon juice not only sounds delicious but it is a mega vitamin pill as well. Perfect for hot summer days. I can only imagine how adorable your watermelon crochet coaster will be, Maya. Oh.....I am freezing from the cold down here....just so you know. :)

Watermelon juice is yummy! We have a juice shop close to use so my husband is always bringing home fresh mango and carrot/orange juice. He has gotten watermelon juice yet, but we do have a big watermelon in the kitchen that I'll be cutting in a couple of days. Take care.
